My Story:

Hello, my name is Sarah and I'm a plant-based advocate, writer, and self-trained chef. I've been passionate about health and nutrition for over 10 years. During that time, I studied with ROUXBE, a plant-based culinary course and complete numerous plant-based and gut health certifications guided by Dr. Will Bulsiewicz, a double-certified gastroenterologist.

My journey towards plant-based living began when a gastroenterologist told me, "You're going to be married to this for life," after reading my biopsy for ulcerative colitis. Determined to prove him wrong, I left the clinic and embarked on a journey of self-discovery.

Living with ulcerative colitis was a challenge, especially for someone who values freedom and independence. I quickly learned the realities of flare-ups and their impact on everyday life. Until in remission, the constant nervousness about food and access to bathrooms became a part of my daily routine. As a result, the initial phase of my diagnosis was a shock to my mental and physical health.

To make matters worse, I had recently moved to New York City and met the man of my dreams, who later became my husband. Life had thrown me into a tangle of relationships that were new to me.

After six months of living in New York, I launched a gut health start-up and delved deeply into the wellness industry. However, my attempt at following a restrictive paleo diet for two and a half years only made me feel weak, miserable, and caused further flare-ups. My relationship with food became strained, and I lost the joy of eating.

In July 2020, during the worst flare-up I had ever experienced, I read Dr. Will Bulsiewicz's book "Fiber Fueled," which transformed my life. The method behind eating more plants not only healed my body but also reshaped my relationship with food. I am grateful for Dr. Bulsiewicz's work, which has opened my eyes to a world of doctors, scientists, and nutritionists who support the plant-based approach.

Today, I'm passionate about passing on the message of plant-based living and hope to help others find healing through the idea of eating a diversity of plants to heal their bodies too.
